褐藻胶多糖分子修饰酶的研究进展

摘要

As a linear Polysaccharide, alginale has different physiological and biochemical characlerislics aecording to iLs slructure and composilion. It holds great application value and polenlial in food, medicine and cosmetics. These characlerislics of alginale are mainly conlrolled by ihe aclion of alginale-modifying enzymes such as alginale lyase, mannuronan C5-epimerase, alginale acelylase and alginale deacelylase. This review mainly inlroduced Ihe synlhesis of alginale-modifying enzymes and Ihe mechanism of alginale modificalion, and summarized Ihe source, Classification, slruclure, mode of aclion and research progress of several alginale modifying enzymes. The emphasis was laid on Ihe research progress of alginale lyase and mannuronan C5-epimerase. And we also prospecled Ihe fulure developmenl of related research, providing reference for the further development and application of alginale and its related modifying enzymes.
